Emerald Coach!


As of today I am a Emerald Team Beachbody Coach! Today was so hectic that I didn't get to look at my page yet but my coach made a picture for me today. I was sooo proud and excited when she surprised me with it. This has really given me that motivation to get my life on track. An Emerald coach is a coach that has 2 coaches under them. That means I am helping change at least 2 other lives. Next step Diamond Coach. I never really thought I would stick with this and truly enjoy it so much.

My job requires me to eat out with vendors rather often. Of course they are normally trying to impress you so they order apps and desserts. This has of course added some of my pounds. Tomorrow I am having lunch with a good vendor friend. We normally go to an amazing Italian place and in the past I would get their Shrimp Alfredo with a side salad and gelato. Here is the game plan tomorrow: garden salad with their housemade balsamic dressing and their shrimp cocktail. Even though I love cocktail sauce I plan to ask for them to skip the cocktail sauce and throw them on the salad. Do you think that is a reasonable request? I do love cocktail sauce but its not worth it. Healthy tastes better.

Shrimp Scampi Zoodles

One of my favorite 21 day fixed approved recipes is Shrimp Scampi Zoodles; when counting containers it is 2 green, 1 red, 2 teaspoons

2 Greens of zucchini
2 tsp coconut oil
4 minced garlic cloves, divided
1 Red of peeled and deveined shrimp
Pink Himalayan salt, to taste
Freshly ground black pepper
1 tbsp chopped fresh parsley leaves
1/2 tsp fresh grated lemon zest
3 tbsp freshly squeezed lemon juice (from 1 lemon)
1/8 tsp hot red pepper flakes



Use a mandolin fitted with a julienne blade or a spiralizer to cut the zucchini into noodles. Cut the strips into 6 to 8-inch strips.

In a large nonstick pan, melt 1 teaspoon coconut oil over medium heat. Add the garlic and saute for 1 minute. Add the shrimp, salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Set aside.

Add the remaining oil and garlic to the skillet, cook 30 seconds then add the zucchini noodles, salt and pepper. Cook 2 minutes, stirring.

Remove from the heat, add the shrimp, parsley, lemon zest, lemon juice, and red pepper flakes. Toss well to combine and serve immediately.

Persistence and Consistence

Have you ever had such a crappy day where you just want to go home and eat and watch tv? That was today for me. Nothing went right at work and by the time I left I was just in a mood. On my drive home I decided that it wasn't worth it and going home and bingeing on tv and eating something not good for me just would not get me to reach my goals. As soon as I got home I put my 21 DAY FIX DVD in the player and said just push play. By the time I was done I had completely forgotten what went wrong today and was so motivated.

For dinner I had 2 yellows of leftover whole wheat pasta, 1 red of carb free meatballs (I through some spinach in them too) I made over the weekend along with some mozzarella cheese (blue) and pasta sauce (purple) on it. Along side of it I had an acorn squash (2 greens).

Meal Prep Sunday

I am sooo excited to eat my food this week! On Sundays I plan out and prep my food for the week. I prepare all my meals except for my dinners and PM snack. However I do generally have some stuff prepped for it. Here is my meal plan for the week:

Breakfast:

Chicken Scampi Pasta (seasoned with lemon, garlic and coconut oil)

Franks Red Hot (free)





Dinner:
Hawaiian Pizza
Flat Out
Tomato Sauce
Mozzarella Cheese
Olives
Low Sodium Ham
Spinach
Butternut Squash x 2

Dessert:
Apple Pie
Sliced Apple
Whole Wheat Tortilla

Dinning Out

Good Evening! Every weekend we generally go to visit my father in-law; part of this trip generally involves going out to eat. What I love about the 21 day fix is that it is rather easy to eat out. Today we went out to breakfast before going to see my friend who just had a baby this week. I chose to get 2 eggs scrambled with sausage patties, wheat toast and a bowl of grapes ( I did only eat 1 piece of toast). I love that I get to eat real food and be satisfied and not deprived. This counted as 3 red containers, 1 yellow and 1 purple. I am one happy camper with this new lifestyle.

My Favorite 21 Day Fix Approved Recipe

Here is my favorite 21 Day Fix Approved Recipe

1 "green" container spiral zucchini
2 teaspoons butter or coconut oil
2 minced garlic cloves
1 "red" container shrimp
Salt and pepper to taste
1 teaspoon parsley chopped
.25 teaspoon lemon zest
1.5 tablespoons lemon juice freshly squeezed
Dash red pepper flakes


Throw the all the ingredients except the zucchini in the pan until the shrimp are cooked through. Add the zucchini toss until warm.

When counting for the 21 Day Fix this counts as 1 Green and 1 Red along with 2 Teaspoons
